[photoshop-beginners] Cutting out head in one photo and pasting it onto another

My son has to use CS3 to cut out his head in one photograph and past it onto another body in another photograph. We don't have CS3. The best I can do for him is Photoshop 7. Can anyone help us try and figure out how to do this? He is supposed to turn this assignment in tomorrow. Of course kids wait until the last minute, and parents scramble to help.
