Andy, this is a quick way to do this.
1. make a duplicate of your background layer.
2. On the duplicate layer add a Hue & Saturation adjustment layer.
3. Saturation -100 (all the way to the left) This will make your photo black and white.
4. Type D to set your color chips to black/white.
5. paint with black on the mask on your Hue & Saturation layer just on the parts you want color
if you just want the eyes to show color just paint over the eyes with black. If you make a mistake switch to white and it will cover up your mistake.
