Thank you everyone for the help. I had trouble wrapping my head around the fact that my image was huge in size and that effected my font size. . I kept assuming that lowering my file size should take care of that. I have lots to learn.

That's a LARGE image size (dimensions) you're working with, that's why... you are going to have to make that font much larger than 72 points for an mage of that size...
I just did a test image at your dimensions, and the font side had to 477 (four hundred seventy seven) points to fit/fill side to side in the 5184 pixel width...

The resolution of the image that you are working on is probably very high. The higher the resolution of the image, the smaller the type will appear. 300ppi is a good resolution for something that you intend to print. Reset it to 300ppi by >Image > Image Size > Resolution then type in 300 pixels/inch.
